Rockwell Falls In Glacier National Park

Rockwell Falls wasn’t our main destination for the day, but it was so magical when we got there it was definitely hard to leave. We were actually heading for Two Medicine Pass, and knew we’d be seeing both Rockwell Falls and Cobalt Lake as well. We loved all 3 destinations so much, I highly recommend any and all. To do everything, you’re looking at 17-19 miles give or take depending on how many side trips you take....

Siyeh Pass

Siyeh Pass in Glacier National Park is a fantastic through hike. This is always a bonus because you get to see new sites and scenery all day long! The trail head, (pictured above) begins at Siyeh Bend on the Going to the Sun Road. It comes out about 10 miles later at Sunrift Gorge where you can catch a shuttle. The trail shares the same start as Piegan Pass, and starts off along Siyeh creek....

Skillet Lasagna With Butternut Noodles

This lasagna is just like the one my mom makes, but instead of the usual pasta, I’ve subbed in butternut noodles. It’s also conveniently made in a skillet, so there’s no layering involved which makes it just a bit easier. I’ve tried several versions of this lasagna with zucchini noodles and sliced zucchini, but they are alway a little watery, (but still really tasty if you want to go that route)....

Thai Curry Stuffed Sweet Potatoes

Thai curry has it all going on with creamy coconut milk tempering the spicy curry paste, loads of fresh vegetables, and plenty of complex carbohydrates for great long lasting energy! I’m pretty much a dairy addict, (I could seriously live on cheese alone) so I’m always excited when I find a dish that’s entirely vegetable based and dairy free! I’m challenging myself not to rely so heavily on meat, grains, and dairy – instead letting vegetables be the focus of most meals, (much easier said than done for sure)!...

Caramel No Bake Cookies

Oh wow! That was what I heard after a friend took her first bite of these cookies. So if find yourself in need of a ‘go-to’ dessert this is a good one. It’s a really allergy-friendly recipe, (since it’s gluten-free, dairy-free, egg-free, nut-free, paleo & vegan). But you’re not going to feel like these are a ‘health food dessert’ if you know what I mean. In fact, fights have actually been known to break out over these cookies in our house!...

Caramelized Roasted Fig Spinach Salad

If you look closely at the edges of the figs in this salad, you’ll see a lovely little ring of caramel around the edges which all happens naturally in the oven without any extra effort or added sugar. In fact, roasted figs are quickly becoming a thing around our house. Just add a small amount of vanilla or spices, and maybe a luscious spoonful of mascarpone cheese, and you’ve got a cheese course and incredible dessert in one!...

Who doesn’t need all the comforting flavors of carrot cake wrapped up into a healthy snack!?! It’s clearly no secret around here that we love energy bites. They’re so easy to make, and they’re absolutely invaluable for keeping me on track for healthy eating. Cobalt Lake In Glacier National Park

The day with hiked to Cobalt Lake in Glacier National Park was extra spectacular. The day started off with fog and snow in August, but the sun quickly came out, and the views were stunning all around. We made it a very long day by first stopping at Rockwell Falls, then heading all the way up to Two Medicine Pass, (coming soon). Finally to end off the day, we took the few minute off-shoot trail to reach Cobalt Lake....

Fountain Paint Pots Trail In Yellowstone National Park

You’ll see 16 different sights on the Fountain Paint Pots Trail in just .6 miles! All this beauty in one small area also makes this trail insanely popular. (This is the case with most of the geyser trails in Yellowstone). The best solution is to avoid the hours between 10am-4pm when these areas are the most crowded. We knew the traffic was going to be intense. But we decided to brave it anyway because we wanted to hike all the geyser loops!...

Garlic Herb Chicken And Asparagus

How does super easy to make and can be done in under 30 minutes sound? Pretty great in my book! I love the concept of sheet pan dinners because they keep everything ultra simple. Just place a few ingredients placed on a sheet pan, and bake into golden brown deliciousness. I serve this recipe both as meal prep for healthy take-along lunches for us, but it’s also a go-to dinner as well....

Indian Paneer Stir Fry Easy Healthy

I’ve been working my way through some recipe requests lately, and it’s been so much fun! This recipe in particular really got me out of my comfort zone, and we’ve found a new favorite! The request was for a vegetarian Indian dish because they love richly spiced Indian food! Well… we love the spices of Indian cuisine too, so I was excited to try and make it at home. I make Butter Chicken once in a while, but I don’t know my way around Indian food real well so I usually don’t make it at home....

Instant Pot Spaghetti Squash

We eat a fair bit of spaghetti squash, yet if you search for it here on the blog, there are not that many recipes. That’s because most of the time we’re eating it just like I’m telling you about today – roasted. Spaghetti squash is a great side dish to all kinds of main dishes as well as anything saucy. It’s also a great way to replace whatever your usual starch would be with another serving of veggies....

No Bake Banana Cream Pie

This morning started off just like any other regular work day in the country. We got up in the dark, made scrambled eggs and coffee before my husband headed off to work just before sunrise. Sat Chicken Vietnamese Noodle Bowls

My husband and I fall into 2 different categories when it comes to eating out. He has his order picked out before we even go because it’s always his favorite item on the menu. On the other hand, I’m always vying that we should try something new – I mean… there’s whole world of flavor out there just waiting to be explored. But… I think he’s rubbing off on me over time because now I have favorites too, and it’s getting harder and harder to branch out....

Sesame Noodles With Fresh Vegetables

I love Sesame Noodles in the summer! A tangle of noodles and vegetables coated in a nutty sauce with hints of garlic and ginger, all topped with fresh cilantro and green onions. This isn’t entirely authentic, but I love adding fresh vegetable and herbs to my Sesame Noodles. Not only does it make a well rounded meal out of them, but I also like them better this way. I never get tired of these noodles and I’ve been known to eat them for breakfast, (better than cold pizza, but that’s just my opinion)!...

Taco Sweet Potato Noodle Bowls

Sometimes it’s fun to mix up the same flavors you’re used to into a different dish altogether. We often make these Taco Sweet Potato Bowls I posted years ago, but lately I’ve been making this spiralized version of the same flavors. As an added bonus, it’s also completely dairy free, and really easy to make. The American version of tacos always comes along with both cheese and sour cream. But I can promise you won’t miss it here with so many other toppings happening....
