Dairy Free Ranch Dressing

I’ve been a ranch dressing fanatic since I was a kid. I mean… I would eat pretty much anything if it was drowned in ranch. Then we would proceed to eat all the broccoli off the tray covered in copious amounts of ranch dressing of course. If time allowed we would move on to the carrots. But most of the time we got caught before we could polish off the veggie tray....

Easiest Roasted Veggie Thai Curry

It’s recipes like this one that help me get dinner on the table even on the busiest of nights. So last week I gave you the recipe for Roasted Market Veggies with Over Easy Eggs and Basil Aioli, where you make two sheet pans of roasted veggies. Today, we’re using the second pan of roasted veggies in this curry which is why it’s so quick to make! I’ve made this recipe with both the Panang Curry Paste and the Red Curry Paste pictured above and I like both, but the Panang does have some sugar in it just so you’re forewarned!...

Easy Sausage And Peppers With Onions

Sausage and peppers have been a long-time favorite combination in our house. I’ve been making different versions of this classic combo since we first got married over 12 years ago. And it’s still one of the only dishes Tyler frequently requests. The reason this is the best version of the classic combo yet is because it’s just so easy! Simply toss it all together on the baking sheet and roast it to perfection....

Glacier National Park At Christmas Time

Glacier in the winter has always been my favorite. You’re much more limited with what you can do, but the scenery is nothing short of magical. And if you happen to be here during the holdiays, Glacier at Christmas Time looks like something you’d see on a postcard. That’s not to say there’s going to be a few challenges to enjoy Glacier in December. To properly enjoy the outdoors this far north you definitely need really good quality clothing, and layer up!...

Grilled Chicken Shawarma Salad With Tahini Dressing

It’s so easy for me to get into a rut when making salads. I find myself often relying on cheese as a primary flavor booster. But since I’m trying to keep my dairy intake down to a respectable level, (you know… somewhere below putting cheese on absolutely everything) I’ve been working on branching out this summer. First up there was my Vietnamese Chicken Salad which was followed by my Sweet Chili Chicken and Mango Salad....

Healthy Zucchini Blueberry Bread

There’s something about the weekend that always calls out for baked goods. Lazy mornings with coffee, and something sweet to nibble on, are one of my favorite things to do in life. Whether we’re at home or out camping in nature, I try and have one morning a week where I’m not tearing off in a hurry to get a million things done. This past weekend we took this Zucchini Bread with us to Glacier National Park....

Mammoth Hot Springs In Yellowstone National Park Get Inspired

Mammoth Hot Springs in Yellowstone National Park is a gigantic travertine terraced hot spring near the north entrance of the park. The whole nature of this hot spring changes from week to week with different parts of the spring being more active at different times. So every time you go there it will look a little different from the last time you saw it! They’ve built a large boardwalk system so you can walk around to the different areas of this site....

Mango Blackberry Smoothie

My love of blackberries didn’t blossom until we took a trip to Oregon during blackberry season! I went from thinking they were alright to a full fledged addiction in just 1 berry, and that’s really not an exaggeration! Blackberries don’t grow in Montana, so every blackberry we see here is imported, and they’re often on the sour, unripe side. But… vine ripe blackberries still warm from the sun, those are an entirely different story....

Protein Packed Mandarin Green Smoothie

I’ve really been working on branching out on my smoothies lately because I find myself using some of the same fruits and veggies over and over again. This one happened mostly by chance, and by chance I mean a happy accident of what I happened to have in the fridge. And I could’ve never predicted how much I would love this semi-strange combination of ingredients! It all started with a container of chopped cilantro I had leftover from making these Sheet Pan Fajita Meal Prep bowls....

Pumpkin Crisp Gluten Free

Both Tyler and I would almost always choose an apple dessert over a pumpkin. But in the last couple of years, we’ve been head over heels for some of my pumpkin treats here on the blog. Most especially my Pumpkin Streusel Muffins, and then my Paleo Pumpkin Pie last year. And really it’s a great dessert any time through the fall season, straight through winter. You definitely don’t want to wait for Thanksgiving to make this Pumpkin Crisp....

Tropical Sweet Chili Shrimp Skewers

I use sambal oelek chili paste mixed with either honey or maple syrup, and it’s just as addicting as the original. And even better, you don’t have to simmer it for ages like you would to make sweet chili sauce from scratch! So anyways, this recipe was obviously inspired by my crazy love of sweet chili sauce. And from there I just added everything to these skewers that sounded like a good match....

Berry Green Smoothie

I started making this smoothie after we had something similar at great coffee house (Deep Creek Coffee Company) we visited during our trip in Southern Utah. If there’s one thing I crave more than anything else while traveling, it’s fresh fruits and veggies (which always seem to be scarce)! Luckily for us, this particular coffee house offered some really great freshly made smoothies. We ordered their Einstein Smoothie which they made with berries, spinach, and Greek yogurt....

Citrus Spinach Salad With Feta Cheese

You know that point you reach every winter where spring with all it’s fresh produce seems so far away, and you’re just craving something fresh!?! This salad started right there with that longing for local produce again. Last summer I made this awesome salad from Giada with local sun-ripened cantaloupe and red onions paired with arugula. It was so good I’m still thinking about it a February later! Since cantaloupe is very distant on the horizon, I took the concept of fruit and red onions together, and went crazy with the amazing blood oranges we’ve been getting here lately!...

Egg White Firming Facelift

This is definitely my number one go-to mask when I want serious results quickly. The only downside I can see, (other than the lifting being temporary and all) is you have to lay quietly somewhere for 15-20 minutes while it dries. You see the problem? Lying still for 15 minutes presents more of a challenge than I’m up to sometimes. All the other masks I use can be applied while on-the-run, so to speak....

Ground meat makes the easiest stir fries you’ve ever made! No need to cut up raw meat because it’s already in small bite-sized pieces just ready to be cooked. And now today I’m sharing my Ground Pork Stir Fry which is based loosely on my Sweet and Sour Chicken. I know you’ll love the sweet and savory flavors of this stir fry too. Plus pork and pineapple are such a great flavor pairing as well!...

Healthy Meal Prep Ideas

Meal prep is the single biggest thing we ever did to start eating healthier! There’s no doubt eating food you prepare yourself does take some time. Instant Pot Bbq Chicken

We’ve been making this BBQ chicken for years as the perfect way to have BBQ flavors on the table, no matter the season! While I’m willing to cook outside at almost any temperature, below zero really is a challenge. My favorite way to serve this is very summery over baked potatoes with a creamy slaw. It’s a bright spot of a meal with ingredients that are readily available year-round. You’ll also find more serving suggestions below....

Lake Agnes Teahouse Hike

The trail climbs through the trees to Mirror Lake before heading up to the teahouse. From Mirror Lake there’s a connecting route to the Plain of 6 Glaciers, where there’s another teahouse and you guessed it, amazing views of 6 different glaciers. Just before the teahouse, there’s a waterfall and several flights of stairs. Once you’ve reached the teahouse, it’s time to sit back and enjoy the views! It’s definitely worth it to hike around the lake, especially if it’s later in the day because the light is perfect for pictures from the end of the lake....

Norris Geyser Basin In Yellowstone

We almost didn’t hike Norris Geyser Basin. After all we were exhausted after a full day of site seeing. But so I’m glad we did because this loop is different from everything else we did that day. There is such a variety of geysers and pools to see. And the best part was it was way less crowded than the more popular attractions like Old Faithful! If you’re trying to see a number of attractions all in the same day, I would suggest doing this one smack in the middle of the day when everyone else is down in the Old Faithful area....
