Porcelain Geyser Basin In Yellowstone

The Porcelain Geyser Basin shares the same trailhead as the Norris Geyser Basin in Yellowstone National Park. We didn’t even know about it when we visited, and happened upon it by chance! We did the entire Norris Geyser Basin before we saw a trail branching off with a sign reading Porcelain Geyser Loop. So we decided to go for it as well. We were sure glad we did because the scenery and colors on this particular trail were really stunning....

Sausage Egg Muffins Meal Prep Option

We rely heavily on egg muffins, egg bakes, and frittatas for quick and easy breakfasts on the go. Egg muffins are great because they’re already portioned for you. I like to make a muffin tin of 12 each week, and keep them in the fridge for last-minute breakfasts and lunches. Most of the time we meal prep just simple things ahead of time. And cooked protein is always on the menu....

Tostones Eggs Benedict With Mango Salsa And Avocado Hollandaise

It all started with an all consuming need for Eggs Benedict! It was super early on a Sunday morning in Fernie B.C. and I just couldn’t get the thought of hollandaise out of my head. I mean… is there a better sauce? I don’t see how it’s possible with all that velvety texture, and supreme richness! We walked into what was supposed to be the best breakfast place in town, and ordered 2 Eggs Benedict and a large hot chocolate....

Winter Caprese Salad With Caramelized Delicata Squash

So… instead of mourning the loss of tomatoes, this year I’m reveling in the caramelization of squash! The great thing about this squash is, you don’t have to peel it, so it’s super quick and easy to roast for this salad. This salad is best served as soon as the squash comes out of the oven because the squash is lightly crispy and similar to oven fries. For the squash, cut off both ends and then cut in half....

Bacon Wrapped Barbecued Chicken

A couple of days ago, I grilled the bacon wrapped chicken without the barbecue sauce and served them with Caesar Salad – SO GOOD! I’m usually a bit of a purist about my Caesar Salad, but bacon turned out to be a great idea. Is there anything that bacon doesn’t improve? I like to spread the sauce on one side, place it on the grill, and then coat the backside....

Butternut Risotto

I love eating in traditional Italian style starting with a small appetizer, moving to a first course, then second course, and finally dessert! I don’t always pace myself very well, and the second course sometimes goes by the wayside in lieu of dessert. Not long ago we made a flying trip to Calgary, AB for a long weekend – and whenever we’re in a city, dining is our first consideration and our whole day is arranged around where we’ll be eating!...

Chicken Pot Pie Pasta

Chicken pot pie is one of the most classic of all comfort foods, and most people I know have their own specific memories of it. For me, chicken pot pie is one of my favorite childhood memories. And we would each pick out our favorite doughnut as a treat as well. (Just for the record, my favorite is old-fashioned glazed, closely followed by maple bars.) This became a yearly tradition, and now I’ve come to expect chicken pot pie when fall arrives....

Cilantro Chimichurri

I first tasted chimichurri sauce in a Brazilian barbecue restaurant called Bolero in Calgary. If you’ve never had Brazilian barbecue, now’s the time to start! I love how they serve so many perfectly and simply barbecued meats with flavorful chimichurri on the side for dipping. Now… I’m a sauce girl all the way. But if you go to a really good Brazilian barbecue restaurant, they showcase the quality of their meat and it tastes amazing without added flavor!...

Easy Cashew Chicken Stir Fry Healthy

What are your go-to recipes during the workweek? We rely heavily on stir fries for sure because they’re simple to make, and they’re a 1-pan kind of dinner too. You can also easily customize whatever stir fry you’re making to what you have on hand as well. All in all, stir fry is a must-have ‘back pocket’ kind of recipe. Once you make it a few times you’ll know it so well you can whip it up extra fast....

Flourless Chocolate Peanut Butter Muffins

I’m becoming more and more of a savory person over time, but sometimes I still really crave sweet baked goods for breakfast. Luckily these cravings usually strike on the weekend when I have a little more time to bake! I’ve had this idea in my head for a while, but I just haven’t gotten around to it with a super busy summer, and then the holiday baking. But finally I decided to get serious about making some of these peanut butter chocolate muffins, and I’m so glad I did....

Healthy Meatloaf Meal Prep

This recipe was a combination of inspirations. First up I was craving meatloaf the way my mom made it when I was growing up. And secondly I wanted to make it into a meal prep option like one of my best friends does for her lunches. Which brings me to this… I absolutely love how ideas come together just by sharing our everyday lives with each other. It’s always fun to reminisce about childhood favorites, and also to trade ideas back and forth about what to eat through a busy workweek....

Hidden Lake Overlook

The trail for Hidden Lake Overlook starts near the visitor center at Logan’s Pass in Glacier National Park. We’ve hiked this in everything from snow shoes (in June) to toe shoes (in August) depending on the month. The trail is only 2.7 miles round trip, and the elevation gain is 540 feet, making it one of the easier hikes in the park. The views are breathtaking because your starting elevation is so high....

No Bake Caramel Blackberry Cheesecake

No bake cheesecakes are such an awesome dessert, especially for summertime. They’re one of my favorite things to bring along to family dinners, potlucks, or pretty much any type of celebration! And since I’ve had so many requests for a dairy free cheesecake, I decided it was time to get serious about developing one. This cheesecake is not only decadent, but it’s also paleo, vegan, gluten & dairy free. This makes it the perfect thing to bring along to any gathering because it fits the bill on so many different dietary choices/needs....

Pineapple Orange Banana Green Smoothie

It’s been a little while since I’ve come up with a green smoothie recipe. So long in fact that I went back into the archives to see, and it turns out that the last time I posted a green smoothie was in February of this year! Of course there’s always a reason behind everything, and in this case there’s several. First of all, I sort of fell of the green smoothie ‘wagon’ this summer, and pretty much lived on watermelon and my Strawberry Watermelon Smoothie....

Slow Cooker Spiced Pear Sauce

Ever since I found out you could make applesauce in a slow cooker, I haven’t looked back. Not that it takes very long on the stove top, but it does require attention and stirring. Not so with the convenient slow cooker, you just have to put everything in and it does all the work. I usually put a batch in before I go to sleep and wake up to applesauce, or in this case pear sauce first thing in the morning....

Strawberry Kombucha Mocktail

It’s a perfect 75ºF, and I’m sitting on our patio with this Summer Strawberry Kombucha Mocktail in hand trying to come with some proper words to tell you all about them! Sometimes the words come fast with too much to say. But in times like this, I wish I could just hand you a glass and let the flavors explain themselves. This recipe really is the ‘essence of summer’ and it’s fantastic on it’s own, or with anything from the grill....

This may well be my favorite broccoli salad yet! Probably because of the fresh Southeast Asian-inspired flavors. And… what’s not to love? Juicy chunks of mango, crunchy bell peppers, and a sweet chili lime dressing topped with toasted cashews. I grew up eating Classic Broccoli salad and have always loved it. In fact, I love broccoli salad so much that I made an avocado dressing one called Healthy Broccoli Salad....
